Indian Cooking Class with Chandrika (Part 2)

Today I wanted to share one of the recipes I didn't get to writing about, as the last post was getting long. Today we are going to learn about making a traditional-style Indian curry. Let's start it off strong!

Tutorial: How to make a traditional veggie curry (Chandrika's Recipe)

Ingredients:
- Cooking oil
- Brown mustard seeds
- Cumin seeds 
- Any spices of your choice
- Tomatoes
- Any vegetables of your choice
- Salt
- Water
- Ground pepper
- Basmati Rice

Step 1:

In a pan or a skillet of your choice, over medium heat, put 1-2 tablespoons of oil and let it heat up. Add 1 teaspoon of brown mustard seeds, and 1 teaspoon of cumin seeds. However, you can use whichever spices you want here, but these two are recommended. The oil "tempers" the spices, so seed spices are the best choices here.

Step 2:

Cut up the tomatoes, and add them to the oil so they cook up nicely. You should also take some spices and add them into the mix. We added turmeric. You can add any amount of vegetables you want, and any vegetables you want. In this example, we added some potatoes and peas.

Step 3:

Take your basmati rice, and put it in either the rice cooker, or a pot to cook it with. If using a rice maker, add water up to the designated amount and let it cook. If using a pot, boil a half pot of water or so and add in as much rice as you would like. The water might need to be adjusted depending on the amount of rice used.


Step 4:

While your rice cooks and your vegetables are finished cooking, Add some ground spices or masalas, like red chilli powder, ground black pepper, garam masala, ground coriander, mango powder, or whatever spices you want to it. In this course I learned that most spice combinations taste good, so experiment!

Step 5:

Serve the veggies over the rice, and split it out evenly. Get a drink, and enjoy your delicious curry!

This curry was SUPER tasty and very versatile to make. There are so many flavour and spice combinations to try, and I would highly recommend that you try to make this recipe. It was simple to make, and I believe that you can do it too. It has an excellent combo of flavour and texture.
